Tropical Mango Popsicles

All-natural popsicles are a refreshing way to cool off on warm summer days. These mango, pineapple and coconut milk treats, combined with speckled dragon fruit and kiwi, are like art on a stick!

Makes: 12 popsicles

Ingredients
2 large mangos, peeled and cored
1½ cups (360 ml) pineapple juice
½ cup (120 ml) coconut milk
4 large kiwis, peeled and sliced
1 large dragon fruit, peeled and sliced

Directions
Puree mangos, pineapple juice and coconut milk until smooth. Pour the puree into popsicle molds or cups, two-thirds full. Insert kiwi slices and dragon fruit into each cavity. Top with additional puree, if necessary.

Cover the molds with foil and make a small incision in the center of each cavity. Insert popsicle sticks through each incision (one-third of the way into the popsicle). Freeze for 4 hours.

To remove popsicles from the molds, quickly dip them into hot water.

Baker’s Notes:
Special equipment needed: 12 popsicle molds or paper cups and popsicle sticks
For an adult version, replace coconut milk with vodka and add 2 tablespoons (30 ml) of simple syrup.
