This healthy, allergy-free “ice cream cone” is perfect for afterschool snacking. It contains no nuts, no gluten and no dairy.
I designed this healthy “Ice Cream Cone” snack for my girls, who are allergic to nuts. We enjoy creating afterschool snacks together and making food allergies fun! I like to call it “Snacking with Joy.”
Ingredients
freshly mashed avocado (or your favorite organic guacamole)
organic brown rice
gluten-free
dairy-free vegan chips
cherry tomato (halved)
Directions
1. Place three scoops of avocado on a plate (centered near the top).
2. Place 3-5 chips in a triangle shape to form the “cone.”
3. Put the tomato on top of your “ice cream.”
4. Serve a few extra chips on the side.
