Bite-Size Banana Splits
What’s better than a delicious banana split on a hot summer day? A miniature one you can eat on the go! These bite-size sweets on a stick are perfect for a party or backyard barbecue.
Makes 12
Ingredients
6 medium to large strawberries, washed and dried
2 medium to large bananas, peeled
Vanilla ice cream (or flavor of your choice)
12 maraschino cherries
Chocolate syrup, cold
Colored sprinkles (optional)
6 bamboo skewers (cut in half) or 12 cookie pop sticks
Directions
Remove strawberry stems and slice each strawberry vertically into two pieces. Cut bananas into 12 one-inch pieces. Use a melon baller to scoop 12 mini ice cream balls. Immediately stack the fruit and ice cream on each stick—strawberry, ice cream ball, banana and cherry on top. Place flat on a plate covered with wax paper. Drizzle the refrigerated chocolate syrup on top of the ice cream and fruit. Add colored sprinkles (if desired) and place immediately in the freezer to set.
Super Mom Says: On sizzling hot summer days, this can be an exciting indoor activity that will help the kids keep their cool. Of course, when it comes time to eat these mini morsels, send them back outside to avoid a melted mess!
