Ramona's Thin Mint Brownies

1 pkg Ghiradelli Brownie mix (I use triple chocolate)
2 cups confectioner’s sugar
1/2 cup butter, softened
2 tsp peppermint extract
1 - 2 Tbsp. milk
green food coloring (if desired)
6 tbsp. butter
1 cup semisweet chocolate chips

DIRECTIONS: 

1.| Grease a 9 x 13 baking dish.

2.| Follow directions on brownie package and bake accordingly. (Most of the time, the box directs you to make it in a 8 x 8, but you’re making it in a 9 x 13 so it will not take as long to bake, usually 25 - 30 minutes). Cool completely!

3.| In a small pan, melt 6 tbsp butter. Add the semisweet chocolate chips and melt. Cool.

4.| In a small bowl, beat confectioners’ sugar, butter and peppermint extract, add milk until creamy. Add green food coloring to desired color.

5.| Spread green frosting on completely cooled brownies.  When chocolate mixture is very cool (so it doesn’t melt the frosting) spread on top of the green frosting.

Chill for at least an hour before cutting into squares.
